Using inexpensive and easily obtainable ingredients, you’ll learn how to make different kinds of fresh soy milk to craft a broad range of tofu. We’ll make silken tofu, tender block tofu, warm tofu pudding (think soy panna cotta) and ethereal yuba (tofu skin).
Good tofu is exquisite, like well-made cheese or fresh bread. Experience its excellence by making your own. Join cookbook author Andrea Nguyen to explore soybean magic.
After journeying from bean to curd, we’ll set up a tofu tasting bar with savory and sweet toppings to try out on our creations.
Tofu making is an ecological endeavor, and we’ll discuss how to source quality beans and coagulants, and uses for tofu byproducts. Andrea will also help you demystify Asian ingredients. Along with tastings and samples, lunch will feature a menu of dishes prepared from Andrea’s cookbook: Asian Tofu: Discover the Best, Make Your Own, and Cook It at Home.
Note: Bring your copy of Asian Tofu or purchase one in class for her to sign!
