What you'll learn in this culinary (meals) class:

Learn the secrets to making a rich and fragrant chicken dish to pair with saffron spiced rice with a crispy potato tahdig!

Since Mab can’t physically welcome you into her home, she wants to do so virtually!

Our online classes are designed to be special, meaningful opportunities to share cooking, culture, and connection--just like our real life experiences. We want you to cook along, and we promise there will be plenty of time for questions, conversation, and stories. It will all end with a virtual dinner party where you'll get to share in the fruits of your labor, apart, but together!

In this 2.5 hour interactive online experience Mab will guide you through making two of her family recipes: 

  • Aloo Morgh-e Beround-e Parvin Joonam (a rich and fragrant chicken dish made with onions, prunes, saffron, rosewater, cumin, turmeric, and cinnamon)
  • Kateh Polo Zafran Ba Tahdig Sibzamini (perfectly steamed saffron rice with a crispy potato tahdig).

Here’s how it works:

After registration you’ll receive an email with the Zoom link, shopping list, equipment list, and recipe packet.

At the scheduled time of your class, you’ll click on the Zoom link and join your class live! Afterwards, you will receive a link to a video recording of your class that you can revisit at your leisure.

  • 1/4 teaspoon/.50g saffron threads, preferably Iranian
  • 4 ice cube
  • 1 cup dried prunes
  • 9 to 11 tablespoons neutral oil
  • 3 medium red onions
  • 1 teaspoon turmeric
  • 4 skin-on bone-in chicken thighs (about 1 ½ pounds)
  • 2 teaspoons fine salt
  • 2 tablespoons ghee
  • 1 tablespoon cumin seeds
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon rose water
  • 1 ½ cups long grain white basmati rice
  • 8 small yellow/Yukon potatoes
  • Fresh flat-leaf parsley sprigs (for serving)
  • Fresh cilantro sprigs (for serving)
  • Fresh mint sprigs (for serving)
  • Scallions (for serving)
  • Radishes (for serving)

Remote Learning

This course is available for "remote" learning and will be available to anyone with access to an internet device with a microphone (this includes most models of computers, tablets). Classes will take place with a "Live" instructor at the date/times listed below.

Upon registration, the instructor will send along additional information about how to log-on and participate in the class.

Note: This provider has a temporary cancellation policy for COVID-19 related cancellations which is as follows: 

Cancellations made 3 or more days in advance will receive a full credit for a rescheduled date with this provider   


Original cancellation policy (non-COVID-19):

If you cancel two weeks before your workshop you will receive a full credit for League of Kitchens, which you can apply to another League of Kitchens workshop. After that, you may send someone else in your place (we ask you to notify us in advance if you're doing this). In the rare event that an instructor needs to cancel last minute, students will receive a full refund.

Loved the class and the personal story of Mab's. It was also great to have a moderator (Justine) who would type into chat what was happening and with instructions. This way if you missed what was said, you could look at the next step. I have found often with these classes that the written recipe is changed once you are in person and with the noise, even in your own kitchen, you sometimes miss what was said. The food was delicious and everyone in the family enjoyed it. Thanks for offering the virtual classes.
