What you'll learn in this basic cooking class:

The Culinary Basics Cooking Series is designed for the novice cook with little or no culinary experience. Starting with essential knife skills, Chef Eric will help you learn to be comfortable and confident in the kitchen. Using easy-to-prepare recipes and basic cooking techniques, you’ll learn about the importance of advance preparation to save you time and reduce stress in the kitchen.  

When possible, we use ingredients that can be purchased ready-to-cook to make things easier for you. This class meets once per week over a 4-week period. You will be able to create delicious and varied Meals and Dinner Parties by the end of this Series.

  • Classes designed for the novice cook with little or no culinary experience
  • Basic Cooking Techniques  - Roasting, Sautéing, Grilling, Baking, Poaching
  • Chicken, Fish, Beef, Pasta, Shellfish, etc….
  • Knife Skills Instruction and Practice

Class #1 – Introduction – Knife Skills/Sauté Techniques

A good knife is essential in any kitchen, from the professional to the home cook.  Today we will discuss the various parts of any knife, including how to care for them. You will learn how to Chop, Slice, Julienne and Dice vegetables quickly and efficiently. We will use these skills to gain confidence and cover different cooking techniques for easily-prepared meals including

  • Parmesan Risotto Orzo Pasta
  • Latin-Style Carne Asada
  • Oregano Lime Chayote Squash
  • Ajieco Stew (Chicken, Potato and Corn Stew)
  • Spiced Peruvian Chickpea Cakes

Class #2 – Meal Preparation/Organization

In the second class, students explore International Meals and learn how the organization, cooking and knife skills acquired in the first class will make these new dishes easy to make. These recipes will quickly become favorites and impress your friends and family with your newfound cooking confidence.

  • Pan-Seared Chicken with Fresh Tomato-Herb Sauce
  • Kalamata Lemon Orzo Pasta
  • Salmon Steamed in Wine / Herbs
  • Mixed Greens w/ Balsamic Vinaigrette
  • Asian Chicken Skewers with Spicy Peanut Sauce
  • Thai-Style Cucumber Rice Noodles
  • Seared Spice-Crusted Ahi Tuna with Sesame Dressing
  • Brown Rice and Soy Edamame

Class #3 – Fresh Pasta, Sauces, and Potatoes

Making pasta from scratch adds a powerful personal touch to your meal. Chef Eric will show you how easy and versatile pasta is. Specific cuts of pastas will be made and the types of sauces to pair with these cuts will be taught. Homemade Pastas and Sauces are added to the menu and we discuss lighter sauce options, too.

  • Bolognese Tagliatelle
  • Fettuccine Alfredo
  • House-Dried Herb Pasta with Sauce
  • Herb /Cheese Spaetzle with Cream Sauce
  • Garlic Rosemary Roasted Potatoes 
  • Roasted Red Pepper Potatoes au Gratin

Class #4 – Beef, Fish, and Shellfish Meals

The final cooking lesson addresses sanitation, safety, and cooking techniques with Fish and Shellfish. You learn to create full meals and plate them beautifully with this exciting class. Together students will enjoy great food and conversation with their new foodie friends as they celebrate the culmination of this series. Feel free to bring your favorite wine for this final class. Recipes include:

  • Grilled Carne Asada with Pilaf-Style Rice
  • Guacamole, Sour Cream, Tortillas
  • Mint Basil Pesto Bass Vegetable Packets
  • Mom’s Meatloaf Cupcakes with Smashed Potato Frosting
  • Seared Chipotle-Spiced Shrimp
  • Grilled Portobellos with French Dressing
  • Smashed Potatoes
  • Shiitake Asparagus Sauté

Cancellation Policy: If you cancel a class, we will give you credit toward another class if you notify us by telephone at least 48 hours prior to class time. Credit is valid for ONE YEAR. Students can only reschedule ONCE. 

NO REFUNDS unless Chef Eric cancels a class.

DIRECTIONS: 10 Freeway East or West, exit Overland Avenue, north to Pico Blvd –Right on Pico, left on Pelham Avenue (1st Street). 405 Freeway SOUTH, exit Olympic Blvd, east to Overland Blvd–go 1 block past Overland, left on Pelham Avenue –on right-hand side. 405 Freeway NORTH, to 10 Freeway East, 1st Exit, Overland Blvd –exit and go north to Pico Blvd – RIGHT on Pico and make an immediate left on Pelham Avenue. If you park at a METER, YOU MUST MOVE YOUR CAR after 2 hours – we suggest Parking at the LOT below. PARKING: TWO PUBLIC PARKING LOTS-10 hour parking-$3. PARK at 10 HOUR SPACE. Credit cards AND quarters. 1. Prosser Ave, 4 blocks East of Overland, North of Pico-Lot on left hand-side past the alley. Walk to Pico, RIGHT 3 blocks to Pelham, RIGHT–on the right-hand side. 2) Overland Ave, North of Pico Blvd next to Chase Bank lot. Turn into the lot immediately after the last house before the Bank Lot. Park and walk south to Overland Boulevard; east one block to Pelham Ave, turn left – we are directly on the right-hand side. Class will start promptly so please review the parking and direction information that is attached. We suggest parking at the public parking lot on Overland Boulevard, just north of Pico Boulevard, behind Chase Bank – you may park there for 10 hours for $3 Monday through Sunday – make sure you are at the correct parking spot as some are hourly. You MAY park at any meter on PICO Boulevard or Pelham Avenue for TWO HOURS.
